Mango Bread 
2 cups flour
1 1/4 cup sugar
1 tsp cinnamon
2 tsp baking soda
1/2 tsp salt
1/4 cup apple sauce
1/2 cup vegetable oil
3 eggs
2 tsp vanilla
1/2 cup mango puree
2 cups fresh diced mango
Preheat oven to 350º. In a large bowl combine flour, sugar, cinnamon, baking soda and salt. In a medium bowl combine apple sauce, vegetable oil, vanilla, mango puree and eggs.
(I didn't have mango puree so I made it by combining 1/2 cup diced mango with the eggs in a food processor until smooth. It made if very fluffy)
Add wet ingredients to dry ingredients and mix well. Fold in diced mango.
Pour into bread pan and bake for 60-65 minutes. ( I could have baked a little longer but it smelled so good I could not wait) If you do cook a little longer you will want to cover the top with foil to prevent over browning.
