Honey Grain Bread (for bread machine) Honey Grain Bread
1 ½ pound loaf (about 16 slices)
1 cup water
3 tbsp honey
2 tbsp butter, cut up
1 2/3 cup bread flour
1 cup whole wheat flour
1/3 cup Vital Wheat Gluten
¾ cup muesli (about $.34 from bulk food bin)
¾ tsp salt (make sure it's fresh)
¼ tsp cinnamon
1 1/8 tsp bread machine yeast
Add the ingredients to the machine according to the manufacturer's directions. If available, select the whole grain cycle, or select the basic white bread cycle, and if available, the light color setting.
I substituted 1/3 cup WW flour with the Vital Wheat Gluten. Also, my last two loaves of WW type breads collapsed and/or had a hole inside. I opened a new can of salt, and no more problems. The light color setting makes the crust very soft, which was a nice change of pace. The muesli has a few raisins in it, just enough to make the bread tasty but not overly raisin-y like raisin bread.
