soyjoy coconut shrimp...stockpile style

Made up a recipe using those soyjoy bars from last yr sales, the saltines - our publix penny item from a couple of weeks ago, and smuckers a publix bogo item this week.

coconut shrimp with soyjoy bars.
2 cocount mango soyjoy
1 pack of saltines
2 eggs beaten,
shredded coconut...left over from christmas
bag of frozen cooked shrimp
1/2 c cooking oil


grind up 2 coconut mango bars
grind up 1/2 row of saltines
add 1/4 to 1/2 c shredded coconut...toss/mix in a lidded bowl

dip shrimp in eggwash
dredge shrimp in breading mixture...let dry 2 minutes and re dip with egg and breading mixture.
pan fry in small amount of oil for 5 min and flip. cook an additional minute.

We made a dip out of 1 tsp mango smuckers, 1tsp orange smuckers (we were out of pineapple) and 1tsp coconut.
Mix in 1 tsp water and micro 1 min. Increase the water if you prefer a thinner sauce.

    This is great! I cannot STAND the mango soyjoys by themselves (berry is good, strawberry is good, but I just can't do the mango) so I'm eager to try this out.
