Veganism: Day 3

Day 3 has hit, and I feel great. DH is definitely making the transition easier. I find my stockpile of snacks and freezer of cooked meat tempting, though I've been successful in resisting. I think the issue is when I have down time I'm tempted to munch - like all of us!
So, DS and I have taken extra walks when temptation strikes. I think the switch would be MUCH harder if I tried to make more elaborate vegan meals. Sticking to basics really has helped. Here's my menu from today for me:
Breakfast:
1 Banana
1 glass of Vanilla soymilk
Morning Walk:
1 bottled water
Lunch:
1.5 cups of Brown Rice w/handful of steamed chopped carrots
2 cups of Salad Mix w/Kraft Fat Free Italian Dressing
12-20 Red and Green Seedless Grapes
1 bottle water
After Lunch/DS Nap Walk:
1 bottled water
1 Del Monte Fruit Chillers
Dinner:
2 cups of Brown Rice w/a cup of steamed broccoli florets
2 cups of Salad Mix w/Kraft Fat Free Italian Dressing
1 bottle water
Between Dinner & Bedtime:
4 bottles of water
DH's menu is a bit different as a big goal of mine is to get up to my 8 servings of water per day. I felt water logged last night and this morning, which made it hard to eat much, but this evening is much better.

And it is definitely new to be checking for produce deals more than anything else in the grocery ads
I can NOT wait till the garden (1000 sq. ft.) is ready!
Trying to find a good subsitute for butter on sweet corn...I might just try it plain... or hunt a vegan recipe for it...
I have a freezer full of Morningstar, Quorn and other vegan meat subsitutes but right now... we're not ready for subsitutes. It feels like we really need to delve into veganism before we bring anything like meat subsitutes in...

Earth Balance sticks are great as a butter replacer. Blue Bonnet light sticks are also vegan. Since your menu looked a like it could get a little boring here's my favorite easy to use, go to cookbook is "150 Vegan Favorites" All of the recipes are fast, easy and you should have just about everything in your pantry already. Plus it's only around $10 at Barnes and Noble. Also Kashi and Amy's kitchen have some really good frozen meals. Good luck and good for you!

I love Corn just as it is...so yummy and juicy! LOL! GREAT for u! I did this ONCE and ended up going back to CRAP food once I was pregnant and craved, LOL! I think it is great! And after 2-3 days u def notice how much better u feel about urself, how much energy u have and just how healthy I actually felt! Gosh...I lost 20lbs in one week! I put on 50+ pounds with this baby so far so maby after I have him I will try it again! LOL! Ill be watching your blog for yummy meal ideas! GOOD LUCK!
BTW...I never dared drink soymilk until I went veagan. Its so darn yummy...my kids and hubby all drank it. Have u tried the rice milk yet?
