Some things I know I will do different in 2009:

• have more fresh fruits and veggies in our diet. even though I have a garden (which failed for the most part this year) and tons of canned or frozen, it would be nice to have more fresh
• learn to cook more from my stockpile and learn to substitute items better
• get more protein in our diets. we are not huge meat eaters and I realize I should try and pack in more protein for our meals
• splurge a little more. my kids probably think I am a big meanie most of the time, usually saying no to their requests to purchase certain items
• not waste so much food. this is a big one for us. my kids won't eat left overs very often and I am still used to cooking for 8 people (the amount before the big "D") and need to learn to cook for smaller amounts or immediately put it in the freezer for another day, otherwise know as once a month cooking (OAMC)

Kroger has finally put the fleischmann's yeast on sale for $1. Good thing the 50¢ catalina back when you buy one pack is going on until the end of the year. Now I think I am pretty well set with my baking supplies...unless of course I can get more for free!

7 packs Fleischmann's Yeast used 45¢ coupons tripled and 40¢ coupon tripled
1 Kroger brand mini marshmallows (these were still cheaper per unit than the Kraft brand that were on sale)

I was cleaning up in the garden yesterday and noticed this! I have tomatoes again. I am so glad I left the plant even after I thought it was long dead from the heat of Texas. There are currently seven tomatoes on it with several more blooms.


This is our lone orange, the only one that made it. I have no idea when it will be ripe since this is the first year we have had them. Anyone know? I think it is a Satsuma Mandarin orange.


And my pride and joy. Do you know what this is? This is me never having to buy blueberries again. Home Depot has these 3 gallon pots of blueberries on clearance for $4.xx. I picked up 10 for around $50 to use as edible landscaping in my backyard. One great thing about Home Depot that I am not sure if you all know or not, is they have a one year warranty on their plants. So if they happen to die before a year, I just take in the plant with the receipt and get a new one!


EDIT: Sorry, I got the blueberries from Lowes not HD. When I was a little girl my Hawaiian grandmother used to make this delicious Mango Bread for us. With all the mango I just bought I wanted to make something with it.

Okay, I don't have a Hawaiian grandmother, but if I did, I bet she would have made this for me. It is so good. And if you eat it hot, it is like a cobbler.


2 cups flour
1 1/4 cup sugar
1 tsp cinnamon
2 tsp baking soda
1/2 tsp salt
1/4 cup apple sauce
1/2 cup vegetable oil
3 eggs
2 tsp vanilla
1/2 cup mango puree
2 cups fresh diced mango

Preheat oven to 350º. In a large bowl combine flour, sugar, cinnamon, baking soda and salt. In a medium bowl combine apple sauce, vegetable oil, vanilla, mango puree and eggs.

(I didn't have mango puree so I made it by combining 1/2 cup diced mango with the eggs in a food processor until smooth. It made if very fluffy)

Add wet ingredients to dry ingredients and mix well. Fold in diced mango.

Pour into bread pan and bake for 60-65 minutes. ( I could have baked a little longer but it smelled so good I could not wait) If you do cook a little longer you will want to cover the top with foil to prevent over browning.



This is what it looked like this morning after being in the fridge over night. Thanks to an ad in our local Freecycle Discussion group I was able to take part in a once a year bulk frozen fruit purchase. I ordered 30 lbs of frozen blueberries and 40 lbs of frozen mango. These are individually quick frozen and come in a huge box.

My mother split the cost...and the goods with me. We put 2 cups blueberries per bag with one large bag being 10 cups. With the mango, we put 9 cups per each bag. (didn't want to use up all moms bags)

I ended up with 15 lbs blueberries or 38 cups and 20 lbs mango or 54 cups. My cost was $65 but this will last a long time. This definitely dropped my available total, but I am not really worried about it. I could probably live off the rest of my stock pile for the remainder of the year and then some.
