OMG, Yummy Mango Bread

When I was a little girl my Hawaiian grandmother used to make this delicious Mango Bread for us. With all the mango I just bought I wanted to make something with it.

Okay, I don't have a Hawaiian grandmother, but if I did, I bet she would have made this for me. It is so good. And if you eat it hot, it is like a cobbler.


2 cups flour
1 1/4 cup sugar
1 tsp cinnamon
2 tsp baking soda
1/2 tsp salt
1/4 cup apple sauce
1/2 cup vegetable oil
3 eggs
2 tsp vanilla
1/2 cup mango puree
2 cups fresh diced mango

Preheat oven to 350º. In a large bowl combine flour, sugar, cinnamon, baking soda and salt. In a medium bowl combine apple sauce, vegetable oil, vanilla, mango puree and eggs.

(I didn't have mango puree so I made it by combining 1/2 cup diced mango with the eggs in a food processor until smooth. It made if very fluffy)

Add wet ingredients to dry ingredients and mix well. Fold in diced mango.

Pour into bread pan and bake for 60-65 minutes. ( I could have baked a little longer but it smelled so good I could not wait) If you do cook a little longer you will want to cover the top with foil to prevent over browning.



This is what it looked like this morning after being in the fridge over night. (someone ate almost half of it) The very center was a little gummy, therefore I should have cooked it another 5-10 minutes.

    Erin I read on your tupperware bread . Do you use the Fleischmann's RapidRise yeast on this recepi? They looks so good I need to try this.

    yes, the rapid rise yeast works best.
