Blueberry All-Bran Muffins
another great recipe to use up more of the All-Bran cereal and other stockpile items around the kitchen!
Ingredients
1 cup milk
1 egg
1/3 cup vegetable oil
1/4 cup honey
1 1/2 cups all-bran cereal
1 cup blueberry
1 1/2 cups flour
1/4 cup brown sugar
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon vanilla
Grease muffin tin or use muffin cups. Beat egg in mixing bowl with a fork; blend in oil, honey, milk and vanilla. Stir in cereal and blueberries; set aside.
Combine remaining dry ingredients in another bowl. Stir liquid ingredients into dry ingredients. Spoon batter into muffin cups,filling to the top. Bake at 400°F for 15 minutes. Makes about 10-12 muffins.
