Hoppin' John

Happy New Year!! I am bringing in the new year with a frugal, time celebrated tradition of good luck Hoppin' John...yumm!

Last week, I got an entire half spiral ham for $3 at Kroger with my $8 in coupons. And so now that the ham has been picked to the bone it was time to use that. And lo and behold I had a pound of dry black eyed peas so it was perfect!

Here was what I did...I made my own recipe and it was fabulous!!!
-1lb of dried black eyed peas
-1 ham hock or whatever holiday ham you might have left over
-1 can of stock (I used vegetable since that is what I had on hand)
-One onion diced
-One can of diced tomato's with juice
-Salt and pepper
-1tsp of minced garlic
-1c. uncooked rice
-water

Presoak the peas and rinse. Put the peas back into the dutch oven. Add in the ham hock, onion, tomato's, spices & stock. Fill with water until about 1in. above the beans and until the ham bone is pretty well covered.

Bring to a boil and then simmer with a vented lid for about 2hrs. In the last 30min, add in the dried rice and then cover tightly with lid.


I made cornbread and served it over top of that along with some hot sauce and cheddar cheese. It was heavenly!!

Cost for one huge pot of hoppin' john to feed 5 for DAYS... $1.50

Considering the cheese, hot sauce and cornbread were also either free or almost free after coupons the entire meal was probably a whopping $2.00. Great frugal way to ring in the new year
