Healthy Whole Wheat Banana Nut Pancakes

Posted 01-13-2009 at 05:31:36 PM by GaPeach76

We had a silly supper last night. Actually, it was more because I was having a fun day of playing with my kids and forgot it was time to make dinner

Anyways, I threw together these pancakes and they were DELISH! Here is my made up recipe...
  • 2 1/4 c. whole wheat flour
  • 2 tbsp. baking powder (make sure it is double acting)
  • 2 eggs
  • 2 bananas
  • 1 container of banana, apple & pear baby food (because I got it on super sale at Publix this week and it is great to

Onion Chicken with a Balsamic Reduction

Posted 01-08-2009 at 08:33:15 PM by GaPeach76

Let me start by saying that I just am not a fan of dark meat chicken. Ick. I'm a breast kinda girl

Anyways, so Publix has chicken leg quarters on sale this week for .59lb. Even though it's dark meat, ya just can't pass up that price! So I had this huge package of 6 chicken quarters and wasn't sure what I was going to make out of them.

This is what I decided on last night since it was a little bit healthier than pulling the meat and making a casserole of some...

Hoppin' John

Posted 12-31-2008 at 06:56:37 PM by GaPeach76

Happy New Year!! I am bringing in the new year with a frugal, time celebrated tradition of good luck Hoppin' John...yumm!

Last week, I got an entire half spiral ham for $3 at Kroger with my $8 in coupons. And so now that the ham has been picked to the bone it was time to use that. And lo and behold I had a pound of dry black eyed peas so it was perfect!

Here was what I did...I made my own recipe and it was fabulous!!!
-1lb of dried black eyed peas

Doughnuts are evil

Posted 12-08-2008 at 03:15:23 AM by GaPeach76

WHY in the world did I think that just because I had two coupons to Krispy Kreme (one for half off a dozen and one for a free iced coffee)...that it was a good idea to DRIVE there and buy not one...but two DOZEN doughnuts?? Sure I saved half but seriously?

Luckily I have a house full of males that have taken care of most of them already...but after eating 4 of them and sabatoging my healthy eating plan...this is a good lesson in why certain coupons should just STAY in

Fiesta Magnificent Burrito's

Posted 12-05-2008 at 07:36:22 PM by GaPeach76

I have no idea what to name it since I made it up But tonights dinner was SO easy and SO cheap. I just mixed it all together, along with the water called for on the rice mix, and simmered until the water was absorbed (about 7-8min). Then I scooped it into the burrito wraps and made big ole creamy burritos!

Here is what the breakdown was. All final costs are after any savings/coupons.
  • One chicken breast shredded- $1.00
  • Package of Knorr taco rice- $.30
  • Can of
