Default Horchata (Cinnamon Rice Milk)

I got lots of cheap rice with the .50 Mahtma coupon, and I hate to take the time to cook it, so I make Horchata with it. DS is allergic to milk, and I can control the amount of sugar going into this.

1 cup dry uncooked white rice (brown works too)
1/2 tsp cinnamon (you can omit this if you like, or substitute a dash of nutmeg)
1/3 cup loosely packed brown sugar
1/4 cup white sugar
1 tsp vanilla
4 cups cold water

Add rice and cinnamon to a blender. Blend on high until coarsely chopped, similar texture to cornmeal. You may have to stop the blender at intervals and mix it up to get the right texture.

Add the sugar, (more or less to taste) vanilla and 1/2 the water. Blend on low for 30 seconds. Add remaining water and blend for 30 seconds more.

Allow the mixture to settle for about a minute. Strain mixture thru a cheesecloth into another container to remove the rice sediment. Allow to chill or serve over ice.
