Hotdish or Dinner using BOGO Vegetables?

Any ideas? I'd like to make a few freezer dinners using these vegetables.
They have cheap chicken or turkey that would work too!

This week there's Buy One Get One Free ...
Onions
Mushrooms
Green Peppers
Cherry Tomatoes
Shredded Carrots

Maybe a side dish of homemade applesauce and a nice Dole lettuce salad.

I stole this from cooks.com simply so I didn't have to type it up. But this is one of our favorite chicken hotdishes. Basically, if you've got the Cream of Mushroom, sour cream, and mayonnaise.... you can ad lib the rest.

3 c. turkey or chicken (on sale this week)
1/2 c. chopped celery
1/2 c. chopped onion (on sale this week)
8 oz. water chestnuts
4 oz. mushrooms (on sale this week)
1 can cream of mushroom
2/3 c. mayonnaise
1/2 c. sour cream
2-3 tbsp. melted butter
2/3 c. shredded Swiss cheese (I use whatever shredded I have..on sale this week)
1 pkg. crescent rolls
Saute onions, celery, and mushrooms in butter. Add soup, mayonnaise, sour cream, chicken, water chestnuts. Cook until hot and bubbly. Pour into 9 x 13 or 10 x 10 pan. Cover with crescent rolls. Combine butter, cheese, and almonds. Sprinkle over rolls. Bake at 375 degrees for 20-25 minutes.

And those ingredients are just screaming to be made into Chicken Alfredo with the Ragu alfredo sauce on sale.
