Default Edamame Hummis with Tortilla chips

I was in the mood for hummus, that is why I had to buy my edamame. This is a recipe adapted from Earthbound Farm Organic cookbook. I wanted tortilla chips to dip mine with so we made them at home.

Take 6 flour tortillas and cut them into wedges (6 per tortilla).

Lay flat on a cookie sheet at bake at 350º for 8-10 minutes. Keep checking as they brown fast the last few minutes.


For the Edamame Hummus you will need:

1 cup fresh or frozen edamame
1 can garbanzo beans (also called chick peas)
1/2 cup yogurt (I used our homemade)
2 cloves garlic
3 tsp lemon juice
seasoning


Cook the edamame in boiling water for 5 minutes then drain. Add garlic to food processor and pulse until finely chopped.

Add edamame and garbanzo beans. Pulse 5 to 6 times until mixture is coarse. Add yogurt, lemon juice and spice. Blend until smooth. Chill for at least 30 minutes to let flavors mesh.

Enjoy with your homemade tortilla chips! Store left over hummus in the fridge to up to a week or freeze.

Now that sounds yummy!! I love making hummus differently each time, never thought to add edamame to it :)
