The one robinbrooke posted is a family favorite that my aunt makes-- she minces the veggies in a mini-chopper, which is great for picky eaters, cuz I never knew they were in there till she sent me the recipe!
My mom occasionally makes one similar to isis' recipe, except she adds some chopped ham (the thin-sliced kind that comes in the little cheap packets).
Then this one is a favorite of my coworkers (actually some in our snack area right now, lol):
Shrimp Cheeseball
2 pkg (8 oz) cream cheese, softened
1/2 bag frozen salad shrimp
Cocktail sauce (preferably Heinz brand)
Rinse shrimp to thaw, and drain well. Coarsely chop shrimp, if desired (not necessary, but makes it a little easier to spoon onto crackers). Mix together shrimp and cream cheese. Mound mixture in middle of a serving bowl. Pour cocktail sauce over top to cover. Serve with Wheat Thins, Club crackers, or any favorite crackers, and keep remaining cocktail sauce handy to add more on top of cheeseball later (if needed).
(Sounds so simple, but has a wonderful taste-- even enjoyed by those who're not crazy about seafood!)

We make this every year.
2 pks of cream cheese
1 bunch of green onion chopped leave the onion part out you only use the greens.
1 pk of cheddar cheese
2 pks of corned beef
You mix all but the beef together. Then you take 1/2 a pk to 1 pck of corned beef cut in small sqaures and mix together w/ the rest of mix.
Then make your ball. Then take rest of meat at cut into small squares and layer all over the ball. Serve w/ crackers.
3 pkgs cream cheese
1 pkg taco shredded cheese
parsely
chives
Mix all together and make 2 balls.
Oh, another one I just thought of-- not really a cheese "ball" but serves the same purpose, and it's great for this time of year! I'll probably be making this for my coworkers one day next week...
Pepper Jelly Christmas Tree
1 pkg cream cheese
Red or green pepper jelly (red is a little spicier, but green is prettier; I usually make 2 and do one of each)
While cream cheese block is still firm, cut in half diagonally. Rearrange the 2 triangles to shape one large triangle (2 outer edges back-to-back, with both skinny angles together at the top). Pour pepper jelly over top. Serve with your favorite crackers (Club or Ritz-type are best). You can also stack 2 or 3 square crackers at the bottom of the triangle, to look like a tree trunk.
-----------
Note: I'd never had pepper jelly before making this the first time. I found it with the regular jellies and jams at Kroger. Even though the red one is spicier, because of the cream cheese, neither jellies are burn-your-mouth hot. The green one is mild enough that you could probably make this recipe as a bagel spread for breakfast or brunch. And the red one has just enough kick that it makes a great party snack!![]()
