We got off of food stamps begining on 07 and are making really good progress. We were able to use the help for a time and get ourselves back on our feet. And are trying ever so slowly to build a nest egg so that if God forbid my DH is injured at work again we will be able to support ourselves better.
I think vision and goals (personal, family, and financial) are very important!
OP keep track of your savings and spending and once your DH starts to see how much more stuff you can get for the money or more money you can save or use towards other things I am sure he will "get it" more. Perhaps treating him to a night out and saying to him "I paid for this dinner with my coupon savings" will impress him.
