One of my absolute favorite things to eat during the summer is pasta salad, and not to toot my own horn too much, I have been told that my pasta salad recipe is the best and I couldn’t agree more.
I make this ultimate pasta salad recipe all the time, for pot-lucks, summer get-togethers, for dinner. I usually make a double batch because the leftovers (if there are any) are even better the next day and make for a perfect cool summertime lunch or snack.
The recipe below is my recipe, exactly as I make it. But feel free to add or subtract ingredients to suit your needs.

Ingredients
- 2 Lbs. Curly Pasta (I used Cellentani)
- 1 (7 Oz.) Package Sliced Pepperoni (cut in half)
- 1 (16 Oz.) Bottle Red Wine Vinaigrette (I prefer Wish-Bone brand)
- 1 (15 Oz.) Jar Marinated Roasted Red Peppers (Drained and sliced into strips)
- 1 Medium Red Onion (diced)
- 1 Cucumber (peeled, seeds scooped and diced)
- 1 Lb. Mozzarella Cheese (cut into cubes)
- 1 Cup. Grated Parmesan Cheese
- 1 (3.8 Oz. Can Sliced Black Olives (drained)
Instructions
- Prepare pasta according to directions on box and cook till just al dente.
- While pasta is cooking prepare the rest of ingredients by chopping your vegetables, cheese and pepperoni.
- Drain cooked pasta in colander and run hot pasta under cold running water until completely cool.
- In a large.
- Combine all ingredients in a non-reactive bowl and mix well with a large spoon.
- Cover and refrigerate for at least 1 hour to chill or for up to 3 days.
Notes
Serve as a side dish or main dish on a hot summer night. Leftovers are great at a lunch the next day.
To cut the fat content use a fat-free salad dressing and cook the pepperoni till crisp and drain off the excess fat. Pepperoni will be crispy like bacon. Very tasty!

We spend some time together having a BBQ and later in the evening watching the fireworks.
Our most favorite thing to do is spend family time outside with a bbq pit and swimming/games!
